Scallops with passion fruit

Ingredients

  • 20 scallops
  • 2 passion fruit
  • 2 tbsp. caster sugar
  • 1 tsp. soy sauce
  • ½ bird's eye chilli (optional)
  • 1 tbsp. rapeseed oil
  • 4 sprigs Thai basil, leaves removed

 

Preparation

1. Empty the passion fruit into a small saucepan. Add the caster sugar and 2 tbsp. water. Bring to the boil, then lower the heat and continue to simmer for 2 or 3 minutes. Strain the contents of the pan and return to the pan. Add the soy sauce and any chilli and bring back to the boil very quickly.
2. Heat the griddle over a fairly high heat.
3. Pour the oil over the griddle and the scallops. Brown them quickly on each side and then drizzle with half the sauce.

4. Place the scallops on a plate, drizzle with the remaining sauce and finish off with a sprinkling of basil leaves.
