Egg muffins

Egg muffins

Serves 4
Prep time: 5 minutes
Cook time: 12 minutes

Ingredients

  • 6 eggs
  • 1 slice smoked salmon, finely sliced
  • 20 cl double cream
  • 2 sprigs dill, finely chopped, plus extra for garnish
  • Salt and pepper

 

Instructions

  1. Whisk together the cream, smoked salmon, dill, salt, and pepper in a bowl.
  2. Divide the mixture evenly between 6 muffin cups.
  3. Crack one egg into each cup.
  4. Cook on a preheated plancha for 12 minutes, or until the whites are set but the yolks are still runny.
  5. Garnish with fresh dill.
