Egg muffins

Serves 4
Prep time: 5 minutes
Cook time: 12 minutes
Ingredients
- 6 eggs
- 1 slice smoked salmon, finely sliced
- 20 cl double cream
- 2 sprigs dill, finely chopped, plus extra for garnish
- Salt and pepper
Instructions
- Whisk together the cream, smoked salmon, dill, salt, and pepper in a bowl.
- Divide the mixture evenly between 6 muffin cups.
- Crack one egg into each cup.
- Cook on a preheated plancha for 12 minutes, or until the whites are set but the yolks are still runny.
- Garnish with fresh dill.
