Fig and Blue Cheese Crostinis

INGREDIENTS

  • 16 slices of seeded baguette
  • 4 figs
  • 100 g blue cheese
  • 2 tbsp honey
  • 60 g pecans

 

PREPARATION

  1. Preheat the griddle to medium-high heat.
  2. Place the baguette slices on the griddle and toast them on both sides until golden.
  3. Cut the figs in half and brush them with half the honey using a pastry brush.
  4. Place the figs on the griddle and quickly sear them until slightly caramelized.
  5. Spread the blue cheese onto the toasted bread slices. Drizzle with a few drops of honey and sprinkle with chopped pecans.
  6. Cut the fig halves into quarters and place one quarter on each slice of bread.
  7. For an extra touch, crumble a bit of fresh thyme over the crostinis just before serving.
