Fig and Blue Cheese Crostinis

INGREDIENTS
- 16 slices of seeded baguette
- 4 figs
- 100 g blue cheese
- 2 tbsp honey
- 60 g pecans
PREPARATION
- Preheat the griddle to medium-high heat.
- Place the baguette slices on the griddle and toast them on both sides until golden.
- Cut the figs in half and brush them with half the honey using a pastry brush.
- Place the figs on the griddle and quickly sear them until slightly caramelized.
- Spread the blue cheese onto the toasted bread slices. Drizzle with a few drops of honey and sprinkle with chopped pecans.
- Cut the fig halves into quarters and place one quarter on each slice of bread.
- For an extra touch, crumble a bit of fresh thyme over the crostinis just before serving.
