Grilled Tomato and Onion Bruschettas

Ingredients

  • 4 slices of country bread
  • 20 cherry tomatoes
  • 4 spring onions
  • 1/4 zucchini
  • 1 clove garlic
  • 2 sprigs basil, leaves only
  • 2 tbsp pesto
  • 1 tbsp balsamic vinegar
  • Olive oil
  • Salt and pepper

 

Instructions

  1. Preheat your grill pan over high heat.
  2. Cut the cherry tomatoes in half. Thinly slice the spring onions. Dice the zucchini. Mince the garlic.
  3. Brush the bread slices with olive oil and grill until golden brown. Spread with pesto.
  4. Drizzle olive oil on the grill pan and add the onions and garlic. Cook, stirring occasionally, until the onions are translucent.
  5. Add the cherry tomatoes and zucchini and cook until just heated through. Drizzle with balsamic vinegar, season with salt and pepper, and toss to combine.
  6. Spoon the tomato mixture onto the bread and top with basil. Serve immediately.
