Grilled Tomato and Onion Bruschettas

Ingredients
- 4 slices of country bread
- 20 cherry tomatoes
- 4 spring onions
- 1/4 zucchini
- 1 clove garlic
- 2 sprigs basil, leaves only
- 2 tbsp pesto
- 1 tbsp balsamic vinegar
- Olive oil
- Salt and pepper
Instructions
- Preheat your grill pan over high heat.
- Cut the cherry tomatoes in half. Thinly slice the spring onions. Dice the zucchini. Mince the garlic.
- Brush the bread slices with olive oil and grill until golden brown. Spread with pesto.
- Drizzle olive oil on the grill pan and add the onions and garlic. Cook, stirring occasionally, until the onions are translucent.
- Add the cherry tomatoes and zucchini and cook until just heated through. Drizzle with balsamic vinegar, season with salt and pepper, and toss to combine.
- Spoon the tomato mixture onto the bread and top with basil. Serve immediately.
