Veal Saltimboccas with sage

EQUIPMENT AND ACCESSORIES

  • Griddle: Initial, Bergerac, Fusion, or Enosign
  • Griddle accessories: cutting board, cutting set, large spatula

INGREDIENTS

  • 4 veal cutlets
  • 2 balls of mozzarella
  • A few sage leaves
  • 8 thin slices of smoked bacon
  • Olive oil

 

PREPARATION

  1. Flatten the veal cutlets using a rolling pin to make them as thin as possible.
  2. Place two slices of mozzarella and a sage leaf on top of each cutlet. Roll up the cutlets and then wrap them with the smoked bacon, securing them with a toothpick if necessary.
  3. Heat the griddle with a little olive oil on high heat, then brown the saltimboccas for 10 minutes, turning them regularly.
  4. Serve immediately!
