Grilled Mango with Passion Fruit

Serves 4

Cook time: 5-10 minutes

 

Ingredients

  • 4 small mangoes, cut in half
  • 2 passion fruits
  • 2 tbsp granulated sugar
  • 1 sprig mint, leaves only

 

Instructions

  1. In a saucepan, combine sugar, 2 tbsp water, and passion fruit pulp. Bring to a boil, then reduce heat and simmer for 3-4 minutes. Strain.
  2. Score the flesh of each mango half without cutting through the skin.
  3. Grill the mango flesh-side down on high heat for 2-3 minutes.
  4. Flip the mango skin-side down to open the scored lines. Arrange on plates, drizzle with passion fruit syrup, and top with mint leaves.

 

Tip

If the mangoes are large, use only half a mango per person.
