Grilled Mango with Passion Fruit

Serves 4
Prep time: 10 minutes
Cook time: 5-10 minutes
Ingredients
- 4 small mangoes, cut in half
- 2 passion fruits
- 2 tbsp granulated sugar
- 1 sprig mint, leaves only
Instructions
- In a saucepan, combine sugar, 2 tbsp water, and passion fruit pulp. Bring to a boil, then reduce heat and simmer for 3-4 minutes. Strain.
- Score the flesh of each mango half without cutting through the skin.
- Grill the mango flesh-side down on high heat for 2-3 minutes.
- Flip the mango skin-side down to open the scored lines. Arrange on plates, drizzle with passion fruit syrup, and top with mint leaves.
Tip
If the mangoes are large, use only half a mango per person.
