Beef skewers with asparagus and onions

Ingredients

  • 500 g cubed beef
  • 1 bunch green asparagus
  • 1 red onion
  • 4 tbsp. soy sauce
  • 2 tbsp. balsamic vinegar
  • 1 tsp. liquid honey
  • 2 sprigs thyme, leaves removed
  • 2 sprigs oregano, leaves removed
  • Sunflower oil
  • salt and pepper

 

Preparation

1. Mix the soy sauce, balsamic vinegar, honey and half the thyme and oregano in a small saucepan and bring to the boil. Remove from the heat and leave to cool.
2. Place the beef cubes in a freezer bag and drizzle with half the sauce. Mix well and leave to marinate for 2 hours.
3. Cut the asparagus into 5 cm lengths and cook for about 3 minutes in a pan of lightly salted simmering water. Remove from the pan and place in a bowl of very cold water.
4. Heat your griddle over a high heat.
5. Peel the onion then cut it in half and then into eighths. Stick a piece of onion on a skewer, followed by two pieces of asparagus and a piece of meat. Then alternate twice between a piece of asparagus and a piece of meat. Skewer two more pieces of asparagus and finish with a piece of onion. Repeat with the remaining seven skewers.
6. Brush your griddle with a little oil.
Brush the brochettes with a little sauce and place them on the plancha. Brush them with the sauce and brown them on all sides to your liking.
Serve the kebabs, finishing with a sprinkling of the remaining herbs.
