Chicken breast with goat's cheese, tarragon and bacon

Ingredients
- 4 chicken breasts
- 4 tbsp. fresh goat's cheese
- 2 sprigs tarragon
- 8 thin slices smoked bacon
- 2 sprigs oregano, leaves removed
- salt and pepper
Preparation
1. Preheat your griddle to medium heat.
2. Slit the chicken breasts into a wallet. Spread 1 tbsp. of goat's cheese inside each breast. Add half a sprig of tarragon, salt and pepper and close the chicken breasts.

3. Wrap each breast tightly around two slices of bacon. Secure the slices of bacon with toothpicks.
4. Place the breasts on the griddle and cook, turning them over fairly regularly. When they are cooked through, turn the heat up to high enough to brown them nicely.
5. Serve with asparagus and creamed peas.
