Thai chicken stir-fry

Ingredients
- 4 chicken breasts
- 1 yellow pepper
- 1 red pepper
- 2 sprigs Thai basil, leaves removed
- 4 spring onions (or 2 spring onions)
- 1 bird's eye chilli (optional)
- 1 tbsp. sunflower oil
- 2 tbsp. oyster sauce
- 2 tbsp. soy sauce
- 1 tsp. sesame seeds
Preparation
1. Cut the chicken breasts into cubes.
2. Halve the peppers, remove the stalks and seeds, then cut into cubes.
3. Thinly slice the cives. Halve the chilli, remove the seeds and cut into pieces.
4. Heat the griddle over a fairly high heat.
5. Pour the oil over the griddle then add the peppers, cives and chilli. Sauté, stirring occasionally, for 3 minutes. Add the chicken cubes and cook until the chicken is cooked.
6. Add the oyster sauce and soy sauce and stir well for 1 minute.
7. Remove from the griddle, transfer to a dish and finish by sprinkling with the Thai basil leaves and sesame seeds.
