Asparagus and egg salad

Serves 4
Preparation time: 10 minutes
Cooking time: 8 minutes

 

Ingredients

  • 1 bunch green asparagus
  • 2 hard-boiled eggs
  • 6 gherkins, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper

 

Preparation

  1. Cook the asparagus in a saucepan of salted water for 4 to 5 minutes, they should remain firm. Drain them and lightly brush them with olive oil. Then grill them for about 3 minutes on the griddle over moderately high heat, turning them regularly.
  2. Mash the eggs through a sieve.
  3. Place the grilled asparagus on a plate. Add the balsamic vinegar, eggs, and gherkins. Salt and pepper to taste.

 

Tip

Feel free to make the salad with a mix of white and green asparagus.
