Asparagus and egg salad

Serves 4

Ingredients
- 1 bunch green asparagus
- 2 hard-boiled eggs
- 6 gherkins, sliced
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper
Preparation
- Cook the asparagus in a saucepan of salted water for 4 to 5 minutes, they should remain firm. Drain them and lightly brush them with olive oil. Then grill them for about 3 minutes on the griddle over moderately high heat, turning them regularly.
- Mash the eggs through a sieve.
- Place the grilled asparagus on a plate. Add the balsamic vinegar, eggs, and gherkins. Salt and pepper to taste.
Tip
Feel free to make the salad with a mix of white and green asparagus.
