Cauliflower skewers

Ingredient
- 1 small cauliflower
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 1 teaspoon curry powder
- 2 sprigs parsley, leaves removed
- 2 sprigs oregano, leaves removed
- 150g Greek yogurt
- Salt and pepper
Preparation
- Cut the cauliflower into florets, then cut the florets in half. Cook them for 3 minutes in a saucepan of lightly salted boiling water. Remove them from the saucepan and place them in a bowl of very cold water. Dry the florets with paper towels.
- Preheat your griddle over moderately high heat.
- In a bowl, mix the olive oil, lemon juice, curry powder, salt, and pepper. Thread the cauliflower florets onto skewers, keeping the cut sides facing the same way to facilitate cooking. Brush them with the flavored oil. Mix the remaining flavored oil with the yogurt.
- Brown the skewers on both sides.
- Place the skewers on plates and sprinkle with parsley and oregano leaves. Serve with the yogurt.
