Pumpkin, beet, and feta salad

Serves 4
Preparation time: 10 minutes
Cooking time: 12 minutes

 

Ingredients

  • 500g pumpkin, thinly sliced
  • 1 bowl of salad greens
  • 1 small cooked beet, thinly sliced
  • 100g feta, cubed
  • 2 sprigs mint, leaves removed
  • 4 tablespoons yogurt
  • 2 tablespoons sunflower oil
  • Salt and pepper

 

Preparation

  1. In a small bowl, mix the yogurt with the oil, salt, and pepper.
  2. Cook the pumpkin slices on the griddle over high heat for 12 minutes, turning them regularly.
  3. On plates, arrange the salad greens, beet slices, and pumpkin slices. Drizzle with the yogurt sauce, and sprinkle with feta and mint leaves.

 

Tip

You can also use butternut squash or kabocha squash!
