Grilled Butternut Squash

Ingredients

  • 1/2 butternut squash
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 4 sprigs oregano, leaves only
  • 4 sprigs basil, leaves only
  • 4 tbsp grated parmesan
  • 1/2 tsp finely grated orange zest
  • 2 tbsp olive oil
  • 4 tbsp pine nuts
  • Salt and pepper

 

Instructions

  1. Peel the butternut squash and cut into chunks. Steam for 5 minutes.
  2. Heat the plancha to medium heat.
  3. Peel and mince the garlic.
  4. Add the olive oil and butternut squash to the plancha. Cook until almost tender. Increase heat to high.
  5. Add the garlic and half of the oregano. Cook until the butternut squash is tender.
  6. Transfer the butternut squash to a serving dish. Top with the remaining oregano, basil, orange zest, pine nuts, and parmesan.
