Grilled Butternut Squash

Ingredients
- 1/2 butternut squash
- 2 cloves garlic
- 2 tbsp lemon juice
- 4 sprigs oregano, leaves only
- 4 sprigs basil, leaves only
- 4 tbsp grated parmesan
- 1/2 tsp finely grated orange zest
- 2 tbsp olive oil
- 4 tbsp pine nuts
- Salt and pepper
Instructions
- Peel the butternut squash and cut into chunks. Steam for 5 minutes.
- Heat the plancha to medium heat.
- Peel and mince the garlic.
- Add the olive oil and butternut squash to the plancha. Cook until almost tender. Increase heat to high.
- Add the garlic and half of the oregano. Cook until the butternut squash is tender.
- Transfer the butternut squash to a serving dish. Top with the remaining oregano, basil, orange zest, pine nuts, and parmesan.
