Stuffed Portobello Mushrooms

Serves 4

Ingredients
- 1 shallot
- 8 portobello mushrooms
- 250g goat cheese
- 1 bunch fresh herbs of your choice (chives, parsley, chervil...)
- 30g walnut halves
- 50g grated Parmesan
- Olive oil
- Salt and pepper
Instructions
- Peel and chop the shallot.
- Clean the mushrooms and remove the stems. Chop the stems and mix in a bowl with the goat cheese, chopped herbs, walnuts, and half of the Parmesan.
- Preheat the plancha. Season the mushroom caps with salt and pepper and fill with the cheese mixture.
- Sprinkle with the remaining Parmesan and cook on a hot plancha for 5 minutes.
