Stuffed Portobello Mushrooms

Stuffed Portobello Mushrooms

Ingredients

  • 1 shallot
  • 8 portobello mushrooms
  • 250g goat cheese
  • 1 bunch fresh herbs of your choice (chives, parsley, chervil...)
  • 30g walnut halves
  • 50g grated Parmesan
  • Olive oil
  • Salt and pepper

 

Instructions

  1. Peel and chop the shallot.
  2. Clean the mushrooms and remove the stems. Chop the stems and mix in a bowl with the goat cheese, chopped herbs, walnuts, and half of the Parmesan.
  3. Preheat the plancha. Season the mushroom caps with salt and pepper and fill with the cheese mixture.
  4. Sprinkle with the remaining Parmesan and cook on a hot plancha for 5 minutes.
