Smashed potatoes with two onions and herbs

Serves 4

Cooking: 15 to 20 minutes
Ingredients
- 600g small new potatoes
- 4 finely sliced spring onions
- 2 finely sliced onions
- 1 sprig of rosemary, leaves removed
- 2 sprigs of thyme, leaves removed
- 1 tablespoon of olive oil
- Salt and pepper
Preparation
- Wash and scrub the potatoes. In a saucepan of boiling salted water, cook them for about 12 minutes, until cooked through, then run them under cold water.
- Using the flat side of a large knife, gently crush them (they should just burst) and place them on the griddle over high heat, cook them for 2 to 3 minutes.
- Add the onions and herbs, salt, pepper, mix for 1 to 2 minutes and serve with a drizzle of olive oil.
Tip
To further enhance the flavor of your dish, replace the spring onions with a few thin slices of fennel.
