Zucchini patties

Zucchini patties

Serves 4
Preparation time: 15 minutes
Cooking time: 10 minutes

 

Ingredients

  • 450g potatoes
  • 1 zucchini
  • 1 onion
  • 2 eggs
  • 2 tablespoons parsley
  • 2 tablespoons cornstarch (Maïzena®)
  • 1 pinch of curry powder
  • 1 tablespoon salmon roe
  • Salt and pepper

 

Preparation

  1. In a bowl, grate the potatoes, zucchini, and onion, then mix.
  2. Add the eggs, parsley, cornstarch, curry powder, salt, and pepper, mix again.
  3. Using a ladle, drop the batter onto the preheated griddle over moderately high heat and cook for 5 minutes on each side. Repeat until all the batter is used.
  4. Serve each fritter on a plate, accompanied by salmon roe. Salt and pepper to taste, and enjoy.

 

Variation

You can add other vegetables to the fritters, such as grated pumpkin.
