Zucchini patties

Serves 4

Cooking time: 10 minutes
Ingredients
- 450g potatoes
- 1 zucchini
- 1 onion
- 2 eggs
- 2 tablespoons parsley
- 2 tablespoons cornstarch (Maïzena®)
- 1 pinch of curry powder
- 1 tablespoon salmon roe
- Salt and pepper
Preparation
- In a bowl, grate the potatoes, zucchini, and onion, then mix.
- Add the eggs, parsley, cornstarch, curry powder, salt, and pepper, mix again.
- Using a ladle, drop the batter onto the preheated griddle over moderately high heat and cook for 5 minutes on each side. Repeat until all the batter is used.
- Serve each fritter on a plate, accompanied by salmon roe. Salt and pepper to taste, and enjoy.
Variation
You can add other vegetables to the fritters, such as grated pumpkin.
